Re-Starting my blog!
Hello blogworld! It has been quite a while since my last post, mostly because I was discouraged by the amount of time blogging was taking and the lack of feedback I was getting from viewers. However, recently a friend of mine started a blog and just seeing how great hers was made me want to start mine again! Also, it is the start of my junior year in college and that means more learning in aerial, dance, fitness and food!
Over the summer I became a little too relaxed about my eating habits with huge ice cream dates with my boyfriend and indulgent dinners out. So I am also looking to bring my eating back to smaller portions, healthier choices, and fresh recipes. I can't wait to start posting again!

Chocolate Chip Oatmeal Flax cookies!
Wow have I been busy! Today I finally got a chance to do some baking... yummm, I did some experimenting with oatmeal cookie recipes and came up with this fiber packed, delicious cookie recipe that is satisfying and healthy!
Chocolate Chip Oatmeal Flax cookies:
1 c. oats
3/4 c. whole wheat flour
1/2 tsp. baking soda
1/2 tsp baking powder
1/4 c. milled flax seed
pinch of salt
1 egg
1/4 c. smart balance light (or any reduced calorie butter spread)
1/4 c. finely grated apple (or applesauce)
1/4 c. packed light brown sugar
2 tsp. vanilla extract
1/4 c. dark chocolate chips
1/4 c. chopped walnuts
1-2 Tbs. coconut
Combine dry ingredients and set aside. Combine egg through vanillla and whip with mixer a few minutes. Mix dry and wet together and mix in chocolate chips, walnuts and coconut. Bake on 375 for about 8 minutes. Makes 20 cookies at approximately 85 calories per cookie!

Aerial photos
Good Morning! Sleeping was so easy this morning with the rain...
I had the MOST amazing breakfast:
-french toast (made with w.w. cinnamon raisin bread, 1 egg and skim milk)
-blueberries and strawberries
-maple syrup
-coffee
..unfortunetley yet again I forgot to take a pictures because I was soooo excited for my food (seriousley I had been dreaming about this breakfast)
So instead I thought I would share some photos of my aerial dancing from last semester...
I'm off to enjoy a day relaxing, running, and teaching...

Big Fruit and Meatballs??...i swear this is a PG blog
Before hopping in the car I grabbed a GIANT banana and some almonds with dark chocolate chips yumm. I have a thing for really big fruit...for some reason the bigger the better and that goes for apples too.The little tiny dancers were so cute today! It was my first day taking over a pre-dance class of 2-5 year olds and I was sooo worried that the girls were going to be scared of me, but they did so well and loved every bit of it! By the time I got home I was STARVING...luckily my dad made his famous meatballs so I boiled up some whole wheat pasta and made a delicious salad with lettuce, tomatoes, cukes, carrots, radishes, sweet peas and cellery.
Since the topic of the day on some of my favorite blogs is meal schedules, this would be a great time to share mine. I have struggled with this topic for a while because I am so busy AND I also have to make sure that I'm not too full to dance or run at any point during the day. Therefore I have learned that my body does better on smaller meals with snacks in between. Usually I eat about every 3-4 hours depending on my hunger level. I also have a big problem with my hunger affecting my mood...as many of my loved ones know...if I don't eat every few hours MONSTER KATIE comes out and that is BAD news for anyone around. So...I have learned to keep healthy snacks with me basically at all times. Depending on my schedule this is how my meals work:
Breakfast @ 8 AM 400-500 cal
Snack @ 10 AM 100-200 cal
Lunch @ 12 PM 500-600 cal
Snack @ 3 PM 100-200 cal
Dinner @ 5 or 6 PM 400-600 cal
Snack @ 9 PM 200-300 cal
I actually try to keep each meal kind of equal in calories (snacks are smaller of course) because it helps my blood sugar stay level throughout the day and decreases monster-like symptoms mwahaha. Anyways I'm out for now...tune in later for snack attack reports :) oh and my opinions on SYTYCD!

it's raining, it's pouring and katie wants to be snoring...
HELLO BLOGWORLD! This is my first official post and unfortunetley I have to start off with today's lunch because I forgot to take pictures of breakfast oops... I was so tired and wanted to STAY in bed this morning because of the rain but no, I had to go to work for a few hours. FYI for the summer I am working in the business office of a county nursing home doing filing, scanning, and helping out basically. Anyways lunch was delicious...
Also I must share my secret ingredient to make ANY sandwich delicious...McCormick Garlic, Pepper, Sea Salt Grinder! Just one twist on my sandwich gives the perfect blend of salt, pepper and garlic MMMM, I sound like a commercial sorry haha. Seriously though, it can make any sandwich delish, give it a try.
Then I nourished my sweat tooth AND got some good old live and active cultures for good digestion from ...
Edy's Cappucino Chip Frozen yogurt topped with walnuts.
Yummm! This froyo is by far my favorite...and trust me I have tried them all (not really but probably most of them). Let me know if you have another favorite froyo brand that I can try!
Ok time to get ready to go teach some little girlies how to dance :). I'll be back for dinner...mwahaha

Response to comments: I'm so glad someone's out there!! rainbow2004-I started dancing when I was 6 and just this year started aerial dance at my state university. It takes a lot of flexibility and strength(which you build up over time). It does take a lot of training to get good at it, but anyone can try it out! I know people who have done it just for a semester and gotten a lot out of it! Usually you have to have dance experience, but one of the students I danced with was a football player who was injured and turned to aerial dance to keep up his strength. Search online for a dance studio, yoga studio, university or even a gymnastics gym that might have aerial dance in your area. It is soooo much fun and really works your entire body. You have to engage your abs, arms, legs...everything and when you're done you feel like you ran 6 miles. (plus you get to express yourself artistically :) )

starting a blog!
I decided to start a blog because of all the inspiring and wonderful blogs that I have discovered and learned so much from. I just finished my sophomore year of college and I am so excited to have tons of free time (except for when I am working and teaching) to challenge my body and try new recipes! During the last few months of school I couldn't cook at all because I was soooo busy so I am starting thing up delicious thing to make already. I'm not quite sure what the format of this blog will be yet, but I am determined to make it interesting and worth everyone's time (including myself).
