It has been quite a while since my last post, mostly because I was discouraged by the amount of time blogging was taking and the lack of feedback I was getting from viewers. However, recently a friend of mine started a blog and just seeing how great hers was made me want to start mine again! Also, it is the start of my junior year in college and that means more learning in aerial, dance, fitness and food!&lt;br /&gt;&lt;br /&gt;Over the summer I became a little too relaxed about my eating habits with huge ice cream dates with my boyfriend and indulgent dinners out. So I am also looking to bring my eating back to smaller portions, healthier choices, and fresh recipes. Today I finally got a chance to do some baking... yummm, I did some experimenting with oatmeal cookie recipes and came up with this fiber packed, delicious cookie recipe that is satisfying and healthy!&lt;br /&gt;&lt;br /&gt;Chocolate Chip Oatmeal Flax cookies:&lt;br /&gt;1 c. oats&lt;br /&gt;3/4 c. whole wheat flour&lt;br /&gt;1/2 tsp. baking soda&lt;br /&gt;1/2 tsp baking powder&lt;br /&gt;1/4 c. milled flax seed&lt;br /&gt;pinch of salt&lt;br /&gt;&lt;br /&gt;1 egg&lt;br /&gt;1/4 c. smart balance light (or any reduced calorie butter spread)&lt;br /&gt;1/4 c. finely grated apple (or applesauce)&lt;br /&gt;1/4 c. packed light brown sugar&lt;br /&gt;2 tsp. vanilla extract&lt;br /&gt;&lt;br /&gt;1/4 c. dark chocolate chips&lt;br /&gt;1/4 c. chopped walnuts&lt;br /&gt;1-2 Tbs. coconut&lt;br /&gt;&lt;div style="text-align: center;"&gt;&lt;a onblur="try {parent.deselectBloggerImageGracefully();} catch(e) {}" href="http://4.bp.blogspot.com/_owv7pSs8IJM/SigDb6RW7gI/AAAAAAAAAEw/m4MQmmQnB5I/s1600-h/DSC00315.JPG"&gt;&lt;img style="cursor: pointer; width: 237px; height: 178px;" src="http://4.bp.blogspot.com/_owv7pSs8IJM/SigDb6RW7gI/AAAAAAAAAEw/m4MQmmQnB5I/s400/DSC00315.JPG" alt="" id="BLOGGER_PHOTO_ID_5343524735908507138" border="0" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;/div&gt;&lt;br /&gt;Combine dry ingredients and set aside. Combine egg through vanillla and whip with mixer a few minutes. Mix dry and wet together and mix in chocolate chips, walnuts and coconut.  Bake on 375 for about 8 minutes. It was my first day taking over a pre-dance class of 2-5 year olds and I was sooo worried that the girls were going to be scared of me, but they did so well and loved every bit of it! I have struggled with this topic for a while because I am so busy AND I also have to make sure that I'm not too full to dance or run at any point during the day. Therefore I have learned that my body does better on smaller meals with snacks in between. Usually I eat about every 3-4 hours depending on my hunger level. I also have a big problem with my hunger affecting my mood...as many of my loved ones know...if I don't eat every few hours MONSTER KATIE comes out and that is BAD news for anyone around. So...I have learned to keep &lt;span style="font-weight: bold;"&gt;healthy&lt;/span&gt; snacks with me basically at all times. Depending on my schedule this is how my meals work:&lt;br /&gt;&lt;br /&gt;                                        Breakfast @ 8 AM 400-500 cal&lt;br /&gt;                                        Snack @ 10 AM 100-200 cal&lt;br /&gt;                                        Lunch @ 12 PM 500-600 cal&lt;br /&gt;                                        Snack @ 3 PM 100-200 cal&lt;br /&gt;                                        Dinner @  5 or 6 PM 400-600 cal&lt;br /&gt;                                        Snack @ 9 PM 200-300 cal&lt;br /&gt;I actually try to keep each meal kind of equal in calories (snacks are smaller of course) because it helps my blood sugar stay level throughout the day and decreases monster-like symptoms mwahaha. I was so tired and wanted to STAY in bed this morning because of the rain but no, I had to go to work for a few hours. FYI for the summer I am working in the business office of a county nursing home doing filing, scanning, and helping out basically. Just one twist on my sandwich gives the perfect blend of salt, pepper and garlic MMMM, I sound like a commercial sorry haha. It takes a lot of flexibility and strength(which you build up over time). It does take a lot of training to get good at it, but anyone can try it out! I know people who have done it just for a semester and gotten a lot out of it! Usually you have to have dance experience, but one of the students I danced with was a football player who was injured and turned to aerial dance to keep up his strength. Search online for a dance studio, yoga studio, university or even a gymnastics gym that might have aerial dance in your area. It is soooo much fun and really works your entire body. You have to engage your abs, arms, legs...everything and when you're done you feel like you ran 6 miles. (plus you get to express yourself artistically :) )&lt;br /&gt;Hayley- thanks for the support! I just finished my sophomore year of college and I am so excited to have tons of free time (except for when I am working and teaching) to challenge my body and try new recipes! During the last few months of school I couldn't cook at all because I was soooo busy so I am starting thing up delicious thing to make already.
